Dark Chocolate Quinoa Bites

My boys definitely got my love for chocolate and this recipe is now one we always have on hand to add to snacks and lunchboxes. Plus it’s a way to get a little quinoa in there!

This recipe features toasted quinoa (not cooked), dark chocolate and flakey sea salt. That’s it! The result is a crunchy, sweet and salty delicious treat. YUM!

I used a silicone mini muffin tin to make these, but you can use whatever you have at home! A small pan and break it up into pieces, or make little mounds on a sheet of parchment paper - just make it thin enough to be able to take a bite easily.

Ingredients

  • 1 cup dark chocolate chips (I use Enjoy Life brand)

  • 1/4 cup uncooked quinoa

  • Flaky sea salt

Instructions

1.  Rinse uncooked quinoa in a fine mesh strainer under cold water for about a min

2. Add to a large pan over medium-low heat

3. Stir occasionally until water is all evaporated (it will initially be clumped together, but you’ll see it start to loosen up as it dries on the pan)

4. Once all of the water is evaporated, spread quinoa out evenly on the pan and shake every 30 seconds or so as it toasts. Once you start to hear slightly crackling (after about 5 minutes), you can remove from the heat

5. Then add chocolate to a microwave-safe bowl and cook for 30 second increments, stirring in between, until all melted

6. Add the quinoa to the chocolate and then mix until all combined

7. Take small spoonfuls and add to a silicone mini muffin tin about 1/3 of the way so it’s not too thick

8. Top with a sprinkle of sea salt and place in the fridge for an hour or until set

9. Remove from tin and place in a container and store in the fridge for 1-2 weeks (store on the counter for about 2 days)
